Peach Salsa

Adapted from a Mango Salsa recipe from Laura DiMattia

ingredients

  • 2 medium tomatoes
  • 2 small peaches
  • 1 c. of corn from the cob or frozen
  • 1/4 c. cilantro
  • 1/2 c. cooked black beans
  • 1/2 c. cooked chickpeas
  • 1/2 sm. red onion, chopped
  • 1 1/2 T. lime juice
  • 1/2 T. olive oil
  • 1 clove garlic, chopped
  • salt
  • 1/2 seeded jalapeno

Preparation

Mix all ingredients together.  Serve with corn chips
