Carrot-Beet Salad

Based on a recipe from Kripalu Cookbook

yield: Makes 4 servings

ingredients

  • 1/2 c. diced sweet potatoes
  • 4 c. water (divided)
  • 1/2 c. chopped dried dates
  • 1/2 c. chopped almonds
  • 1/2 c. raisins
  • 2 c. grated carrots
  • 1 c. scrubbed grated fresh beets
  • 1 c. diced apples
  • 1/2 c. shredded coconut
  • 1/4 c. fresh lemon juice
  • 1/2 t. salt

preparation

  1. In a steamer, steam the sweet potatoes in 2 c. water until soft
  2. In a small bowl, combine the dates, almonds, raisins and remaining water and soak for 10-15 minutes.
  3. In a medium-sized bowl, combine the reserved potatoes, raisin mixture, and remaining ingredients and gently mix together. Serve
