New Orleans Greens Salad

Adapted from the recipe from Kripalu Cookbook

yield: Makes 4-6 servings

preparation time: 15 min

ingredients

  • 2 c. washed, dried, and chopped fresh romaine lettuce
  • 2 c. washed, dried, and chopped fresh mitzuna greens
  • 2 c. washed, dried, and chopped fresh tatsoi greens
  • 1/2 c. washed, dried, and chopped fresh mustard greens
  • 1/2 c. washed, dried, and chopped fresh arugula
  • 2 T. olive oil
  • 1 T. fresh lemon juice
  • 2 T. chopped fresh parsley
  • 1 t. white wine vinegar
  • 1 t. chopped garlic
  • 1 t. Dijon-style mustard
  • 1 t. honey
  • 1/2 teaspoon salt
  • 1/2 t. salt
  • Pinch white pepper

preparation

1.In a large bowl, combine all of the greens.
2. In a small bowl, whisk together the remaining ingredients and pour over the greens. Toss well and serve immediately.
