Middle Eastern Spiced Eggplant

Ingredients

  • 4-5 small eggplants, diced
  • 1 med. onion, chopped
  • 3 bell peppers, chopped
  • 3-4 cloves garlic, minced
  • 2 tsp. Baharet seasoning (from Soluna Garden)
  • 2 tsp. Greek Seasoning (from Soluna Garden)
  • 2 tsp Mediterranean Seasoning (from Soluna Garden)
  • 1 1/2 cups tomato sauce
  • salt and pepper

preparation

  1. Sautee the onions and garlic until translucent
  2. Add the eggplant and peppers and sautee for a minute
  3. Add the spices and stir in
  4. Add the tomato sauce and mix
  5. Add salt and pepper to taste
