Cooking Demonstration : Panzanella Salad

Amy Rindskopf prepared a delicious Panzanella Salad with ingredients she purchased at the market on August 11th. Enjoy!

Panzanella Salad

Ingredients

  • 4 tomatoes, cored and diced
  • 2 medium cucumbers, peeled, seeded & diced
  • 1 shallot, minced
  • 1 tsp Dijon Mustard
  • 6 basil leaves, chopped
  • 1-2 tsp Bondat spice mix ‘Cluck Yeah!’
  • 2-3 Tbsp Omega Dressing Oil
  • 2 tsp apple cider vinegar
  • 1 pita bread, diced

Preparation

  1. Mix together all ingredients up to basil
  2. Whisk together spice mix, oil, & cider vinegar. Pour over vegetables.
  3. Add pita bread & toss.
